Green Banana Baking Flour

Green bananas get a bad rap. However unappealing they may be as a snack, they truly shine when repurposed as flour. Made from the finest and greenest Cavendish bananas from Tropical Far North Queensland, our green banana baking flour is the stuff of nutritious, delicious, gluten-free treats. Swap a cup of regular flour for two-thirds to three-quarters of a cup of green banana flour and reap the benefits of fluffier, earthier-tasting delectables packed with dietary fibre, potassium, zinc, magnesium, manganese, and vitamin E.

If you want your green banana flour to self-raise, simply add two to three teaspoons of baking powder per cup of flour. Use this flour for all your favourite baked goods: cakes, biscuits, or — for the enthusiastic — banana bread!

Gold Sweet Potato Flour

A nutritious and delicious beacon from Far North Queensland, gold sweet potato flour is a fantastic source of prebiotic fibre, beta-carotene, vitamin B6, and manganese. A versatile ingredient, sweet potato flour goes well in many things, whether you’re making baked goods or adding a thickening agent to your favourite stew. As sweet potato flour has a subtly earthy, mildly sweet taste, it can absolutely be the base for your cakes, biscuits and pancakes, or it can blend into your favourite smoothie to provide a prebiotic fibre boost. If you prefer your sweet potatoes savoury, you can also use it to thicken stews, soups, or gravy, or even to supplement your instant mashed potatoes.

Tigernut Flour

If you’re anaphylactic, fear not! A tigernut isn’t actually a nut — it’s a root vegetable named for its stripey, peanut-like appearance. Harvested in Nigeria, the tigernuts in our flour undergo natural drying and skinning before they’re milled into the extra fine flour we love. The final product has a mild vanilla flavour, perfect for baking and cooking.

A nutrient powerhouse, tigernut flour is an excellent source of prebiotic fibre, protein, iron, potassium, zinc, magnesium, and vitamins C and E. If you follow a low-carb diet, you’ll be pleased to know that it contains 50 per cent less carbohydrates than regular white flour. While you can use tigernut flour on its own, you may wish to combine it with other gluten-free flour, depending on what you’re whipping up. This can smoothen its gritty texture, enhance its binding properties, or balance its sweet, nutty — but, at times, overpowering — flavour.
